PANTECHNICON X EAST LONDON LIQUOR COMPANY AKVAVIT

 

At Pantechnicon, we’ve created a new akvavit in collaboration with our friends at East London Liquor Company. It’s now available in store at Pantechnicon, as well as in a new cocktail at Roof Garden.

To create this unique bottling, we built on the exceptional akvavit made by craft distillery Stockholms Bränneri in Sweden. We’ve aged it in ex-wine oak barrels to play with the possibilities of the Nordic spirit.

The ageing process triggers a mellowing of the akvavit, producing a milky finish with added notes of vanilla. Normally most closely compared to gin, the ageing process brings on whisky-like characteristics to the akvavit, making it something that can be effortlessly sipped on its own.

Like any good whisky or gin, it does however also work beautifully in a cocktail. That’s why our head mixologist Gento and resident mixologist Siggi have created a drink which perfectly presents the akvavit: our Apple & Birch Martini made with Akvavit, Granny Smith apple juice, Sav sparkling wine and dill.

“We wanted to create something that shows off the akvavit rather than hide it, but at the same time is accessible to those who haven’t tried the spirit before” explains Gento. “Dill flower is one of the herbs used by Stockholms Bränneri in the production of the akvavit, and so we wanted to play with this element: that’s why the first thing we did in creating this cocktail was to add dill.

“Then for the mixer, apple was an easy choice as it works so well with dill – and we decided it had to be Granny Smiths which we freshly squeeze in house. Finally we added a splash of sparking water to bring down the ABV and lift up the aromas through the fizz.”
